32. 04. THE THEORY OF EVOLUTION (Thursday, April 16) Evolution in wine means acquiring complexity and it is generally equated with the wines becoming better. However, some like them young, while others prefer them more mature, so ultimately it might be a matter of personal taste. Moreover, while old, mature wines still offer unparalleled drinking pleasure, not all wines are capable of aging at the same pace or in the same way. And to make things a little more complicated, today great young wines are drinkable, and oftentimes delicious at an early age. With this in mind, the question of when to enjoy a wine at its peak needs to be reevaluated because mastering how wines evolve is a key factor in discovering the wines one likes and in maximizing our enjoyment. In this fascinating tasting we will discuss how wines age, and compare and enjoy wines at different stages of evolution, including decades old wines. Please note that this class registration is non-refundable.
