What I Wish I Knew Upon Diagnosis In this course students will learn the various conditions that my cause someone to follow a gluten free diet and what exactly a gluten free diet entails depending on the condition. Students will be given various resources on how to navigate eating out, shopping for groceries, recipes and sneaky ingredients that contain gluten. Students will come out of this course knowing safe places to eat in the area, recipes to cook, safe brands of food to buy, and how to advocate for themselves to ensure food safety when eating out. Students will come out of this course with the understanding of how to better support and advocate for themselves and/or their loved ones dealing with this lifestyle change. Please bring a pen/notepad, laptop or tablet. Nicole Ledoux is a high school teacher who has been living with an autoimmune condition that causes her to be gluten free for several years now. She has spent the last few years researching and advocating for herself and others in the gluten free community.
