THE HUMAN TOUCH (Thursday, May 14) Nature versus human intervention: This is the eternal question that lies at the core of the definition of greatness in wine –and sends winemakers, critics and wine aficionados into spirited discussions. In an age in which a more natural and less interventionist winemaking style is seen as the best method to convey the expression of a vineyard’s terroir or the varietal character, we should not forget that winemakers still have to make very important decisions, and also have a rich technological arsenal at hand. These techniques can be used to enhance the character of the wines or to change their style, especially when points awarded by critics can make or break a wine. In this seminar we will discuss the limits and impact of these different winemaking methods and techniques, sometimes as powerful as the expression of the terroir or the personality of the grape varieties. Please note that this class registration is non-refundable.
