Fred will offer a short, engaging demonstration showcasing the techniques and creative thinking behind modern entremets and trompe-l’œil desserts: pastries that play with shape, texture, color, and our expectations of what a dessert should look like. His new book combines detailed techniques, foundational recipes, and the science behind texture and structure, giving home bakers and pastry enthusiasts the tools to recreate these creations and, importantly, develop their own with confidence.Guests will also enjoy a tasting of two verrine flavors, with the possibility of additional trompe-l’œil creations from the CSCA café on display. Following the demonstration, Fred will be available for a book signing and conversation with guests.Trompe-l’œil desserts have captured the imagination of pastry lovers around the world, and this intimate event offers Boston’s Francophone and Francophile community a chance to experience the artistry up close, meet the chef behind the creations, and discover a new perspective on French pastry.
