Recipe: Fig, Arugula and Cashew Cheese Pizza

Finally, you can enjoy pizza without feeling sick, bloated or remorse.

This pizza is made with whole-wheat pita bread, cashew cheese, fresh basil, arugula and figs.

Ingredients

  • 1 piece of organic whole wheat pita bread
  • 1/2 teaspoon of raw unrefined coconut oil
  • 1 cup of cashews
  • A handful of fresh arugula
  • A handful of fresh basil
  • 4 organic figs
  • Raw honey (for drizzling)
  • Balsamic reduction (for drizzling)

Instructions

Cashew Cheese

Soak 1 cup of cashews overnight in purified water. In the morning, rinse and dry off. Place the cashews in blender or food processor until smooth and creamy.

Pizza

Preheat the oven to 360 degrees. Before baking, glaze a piece of pita bread with light coconut oil to give it a nice golden brown finish. Sprinkle a thin layer of cashew cheese over the pita bread.

Cook for 10 minutes in the oven. Garnish the pizza with fresh arugula, basil leaves, figs, and a drizzle of raw honey and light balsamic reduction.
