Preheat oven to 350 degrees F. Line cookie sheets with parchment paper or spray with nonstick spray.
In a large bowl, combine dry ingredients. In a medium-sized bowl, stir coconut oil with brown sugar, vanilla and egg. Combine wet ingredients with dry ingredients, and stir until well combined. Fold in dried blueberries and chocolate.
Drop dough in teaspoons on baking sheets, leaving 2 inches between each cookie. Bake for 12 minutes. Cool on baking sheets for 3 to 4 minutes, or until firm. Remove cookies and allow to cool completely on wire racks.

Ingredients:
- 5 large Gala apples (or apple of your choice) with skin, cored and diced
- 1 teaspoon fresh lemon juice
- 2 tablespoons agave nectar
- 2 teaspoons vanilla extract
- 4 tablespoons unsalted butter, cut into small cubes
- 2 cups rolled oats
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1/4 cup packed brown sugar
Preheat oven to 350 degrees F. Spray a 13 x 9-inch baking dish with nonstick spray.
In a large bowl, combine apples with lemon juice, agave nectar and vanilla extract. Stir to combine. In a medium-sized bowl, combine rolled oats, spices and sugar. Toss to combine. Add cubes of butter and mix with your hands. Dump apples into baking dish and top with oat mixture.
