Moist Spiced Pumpkin Bread Recipe

The aroma of this bread as it bakes is the perfect compliment to a cool autumn day.

It's delicious warm out of the oven or toasted the next day. Try it plain as a dessert. Or, for a post-workout snack, top it with all-natural peanut butter, sunflower seed butter or lowfat/nonfat cottage cheese sprinkled with cinnamon.

Ingredients

  • 1 cup all-purpose, unbleached flour
  • 3/4 cup whole-wheat pastry flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/4 teaspoons ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/4 cup canola oil
  • 1/4 cup all-natural plain or vanilla yogurt or nonfat buttermilk
  • 1/2 cup light brown sugar, packed
  • 1/2 cup granulated sugar or raw sugar
  • 1 tablespoon black-strap molasses (optional)
  • 1 1/3 cups canned pumpkin puree
  • 1 1/2 teaspoons vanilla extract
