Veggies and Dogs Casserole

Perfect for feeding kids, this hot dog recipe can be cooked with minimal effort or cookware right over the fire. Not to mention casseroles are perfect for feeding a large group.

Ingredients

Box of spiral pasta
5 hot dogs, chopped thin
2 cups spinach
3 tomatoes, chopped thick
1 can cream of mushroom soup
2 cups Parmesan
1 tablespoon olive oil

Place a pot of water on your camping stove or the fire grate and add a box of noodles. Let them cook until they're parboiled. Drain the noodles, add the olive oil, and pour this mixture in a Dutch oven or large pot that can be placed directly into the coals. Add the veggies, hot dogs, cream of mushroom soup and 1 cup of Parmesan.

Mix everything together and place your Dutch oven in hot coals; then put a few coals on top of the lid. Let the casserole sit for 10 minutes, and check the hot dogs for doneness. Top the dish with the other cup of Parmesan and serve hot.
