Chicken Sausage Lettuce Wraps

6 large buttermilk or iceberg lettuce leaves
6 chicken sausages
1 pint of deli coleslaw
Soy sauce

Serves 6
Dry the lettuce thoroughly and grill your chicken sausages until they're cooked through. Top the lettuce leaves with the finished sausage, a dollop of coleslaw and a few drops of soy sauce. Wrap and eat. Wrap this like a burrito in tin foil to eat it on the go.

Bourbon Marinated Chicken Grill

1/3 cup each bourbon, thawed lemonade concentrate, soy sauce and apple cider vinegar
1 cup water
2 teaspoons minced garlic
10 to 12 portions of chicken

Serves 10 to 12
Whisk bourbon, lemonade concentrate, soy sauce, vinegar and water and pour the mix into a bag with chicken. Refrigerate it, turning occasionally for several hours or overnight. Drain the chicken and put marinade in a saucepan. Bring it to a boil for 5 minutes and use it to mop chicken as it grills over medium coals, turning often until done.
